Jalapeno Fries with Roasted Garlic Ranch Dip

Happy Wednesday!!! I love vegging out and watching Food TV on the weekend. A few weeks ago I was watching Valerie's Home Cooking and saw the amazing recipe I'm talking about today. How many of you love fries and who doesn't love jalapenos! Well, you're gonna love this....jalapeno fries with roasted garlic (not just plain garlic, but roasted garlic) ranch dip. Now, if you're not a fan of jalapenos (although I don't know why) you can use zucchini or green beans in place of the peppers. The recipe is easy to make but does take a little time, so be patient. You really need to watch out though, my family was eating this up as fast as I was making it!!

 
Roasted Garlic Ranch
Ingredients: 
1 large head garlic, top third cut off
1 tsp avocado oil 
1/4 c buttermilk  
1/4 c mayonnaise  
2 tbs sour cream  
Kosher salt and freshly ground black pepper  
1 to 2 tablespoons finely chopped chives 
 
Preparation: 
1. Preheat the oven to 425 degrees F.
2. Rub the garlic with the oil, then wrap well in foil. Roast until soft and golden, about 35 minutes.
3. In a bowl, whisk together the buttermilk, mayonnaise and sour cream.
4. Push the roasted garlic cloves out of their skins and onto a cutting board; sprinkle with salt. With the flat side of a chef's knife, smash the garlic into a paste.
5. Transfer the paste to the mayonnaise mixture and whisk vigorously to incorporate and break up 6. any large lumps of garlic.
7. Stir in the chives and add salt and pepper to taste.
8. Cover and refrigerate.
  
Jalapeno Fries
Ingredients:
Vegetable oil, for frying
1/2 cp buttermilk 
1 large egg 
3/4 c all-purpose flour 
3/4 c cornmeal 
1/2 tsp paprika 
Kosher salt 
10 large jalapenos, stemmed, seeded and cut into 1/4-inch strips
 
Preparation:
1. Fill a large, wide pot with 1 inch of oil and heat to 360 degrees F.
2. Meanwhile, whisk the buttermilk and egg together in a pie plate or shallow bowl.
3. In a second pie plate, whisk together the flour, cornmeal, paprika and 1 1/2 teaspoons salt.
4. Dip a large handful of the jalapeno strips into the buttermilk mixture, letting the excess drip off.
5. Toss in the flour mixture to coat.
6. Carefully add the strips to the oil, and fry until golden brown, 1 to 1 1/2 minutes.
7. Repeat with the remaining strips, letting the oil come back to temperature between batches.
8. Sprinkle the fries with salt as soon they come out of the oil.
9. Serve the jalapeno fries with the roasted garlic ranch.
*Makes 4 servings
